Albany Rock Oysters with Wasabi Mayonnaise, Pickled Ginger and Black Sesame

A great oyster garnish for a special occasion, the presentation of these oysters is so pleasing to the eye and the flavour combination is very approachable. Perfect as a crowd pleaser.

Ingredients

12 Albany Rock Oysters, freshly shucked

3 tbsp quality mayonnaise

2 tsp fresh grated wasabi if available

1 tsp wasabi paste

Japanese pickled ginger (sushi ginger), finely julienned

1 tsp black sesame

2 garlic flowers

Method

  1. Combine the mayonnaise, wasabi(s) and season to taste.
  2. Spoon or pipe small amounts of wasabi mayonnaise onto the top of each oyster.
  3. Garnish with pickled ginger, sesame seeds and garlic flowers.
