Albany Rock Oysters with Mango Mignonette

Albany Rock Oysters with Mango Mignonette

24 Albany Rock Oysters

1/4 cup mango, cut into small cube

2 tbsp white wine vinegar

1 tbsp red chilli, seeded and cut into small cubes

1 tbsp  coriander stalks, very finely sliced

1 pinch freshly ground white pepper

Toss together ingredients in a small bowl, chill, spoon over oysters.
